Mary Sophia's Tennessee Biscuits
2 cups Domata Living
Flour
1 Tbl + 2 tsp Baking powder
1/2
tsp Salt
1 tsp Cream of tartar
1
Tbl + 1 tsp Sugar
1/2 cup Cold butter or GF
margarine
(Earth Balance Buttery Spread)
3/4 cup Milk or
non-dairy alternative (for buttermilk add
1Tbl lemon juice + liquid
to make 3/4 cup, stir & let sit for 5 min.)`
Preheat oven to 450 degrees. Sift* together Domata Flour,
baking powder, salt, cream of tartar and sugar into medium to large mixing
bowl. Cut in butter/margarine (I use a grater with the butter--it makes it so
easy--just be sure to cut in after grating in half, then cut in again after
finishing) to look somewhat lumpy --doesn't not need to be cornmeal
consistency. Pour in milk and stir gently to incorporate until dough follows
fork around the bowl. Flour your hands and knead gently in the bowl, no more
than 3-4 times. Pull off a biscuit sized amount and gently shape.
** Place
on ungreased baking sheet or seasoned baking stone. Bake for 14 minutes.
Check for doneness. GF products usually have to bake a little longer.
